Certified Farmers’ Markets Fresh Pick of the Week for 1/6: Kale!
Kale is this week’s Fresh Pick of the Week from the Certified Farmers’ Market. Kale is available at all three market locations, and from several local farms; all pesticide-free, and some organic. In culinary circles, Kale tends to be grouped with other “greens,” like Mustard, Turnip, and Swiss Chard, but it is actually more closely related to collard greens, broccoli, and cabbage. It is highly nutritious; with powerful anti-oxidant and anti-inflammatory properties. Often considered a modern “Super Food,” Kale contains high concentrations of beta carotene, Vitamin C, Vitamin K, and Calcium, and is an excellent addition to fresh juice combinations. Most often eaten cooked, Kale can be boiled, but it loses much of its nutrition during the boiling process. To preserve health benefits, it is better to steam it, stir fry it, or even microwave it.
Did you know: During the Middle Ages, Kale was one of the most common green food vegetables in Europe. In modern times, it continues to be a popular food item, but has also gained popularity as a Winter ornamental plant in gardens throughout North America.
