Goat Cheese tops the list as this week’s Fresh Pick of the Week from the Certified Farmers’ Market. Available from two local farms - Nicolau and Drake’s), our fresh-from-the-farm Goat Cheese comes in the classic form of chevre (which is French for goat) in a variety of flavors, and also in the form of Goat Feta. Goat Cheese also fuels a number of related farm products available at the market, including Goat Cheese stuffed ravioli, Goat Cheese Vanilla Bean Cheesecake, and three flavors of delicious Goat Cheese popsicles!
Goat Cheese (along with Goat Milk), was consumed by humans long before cow’s milk. Although similar in chemical composition to cheese made from cow’s milk, Goat Cheese is lower in calories, fat, and cholesterol. It has a unique tart and salty flavor – the former due to the particular types of fatty acids it contains, and the latter due to the fact that Goat Cheese is often brined. The texture of Goat Cheese ranges from soft and buttery to firm and flaky, with many newer forms mimicking types of cheese that are more commonly associated with those made from cows’ milk. Don’t look for all those new varieties at the Certified Farmers’ Markets, though. Our farmers make the traditional Goat Cheese varieties that have been made by goat farmers for thousands of years.
Did You Know: Goat Cheese has quite a long culinary and literary history in Greece. In the Odyssey, Homer refers to a woman stirring wine with goat cheese to reduce the acidity of the wine.
