Fresh locally-grown Garlic
in all its forms and flavors, is this week’s Fresh Pick of the Week
at all three Certified Farmers’ Market
locations. Garlic has been used throughout recorded history for culinary, religious, superstitious and medicinal purposes, and continues to be one of our favorite culinary flavors. And while most of us are familiar with traditional garlic bulbs, we may not be as familiar with the multiple varieties of fresh garlic available at the Certified Farmers’ Market. There is, of course, fresh single clove green garlic – a milder type of garlic that can be used like green onions – elephant garlic (which is really a type of wild leek), and both hard neck and soft neck garlic (some of which are the types we see more commonly at the grocery store). The varieties, and their subtle differences in flavors are worth discovering, and experimenting with in the kitchen.

Garlic has been used for its medicinal and health benefits since the time of the Great Pyramids in Egypt. Louis Pasteur first observed garlic's antibacterial benefits in 1858, and it was actually used as an antiseptic to prevent gangrene during both World War I and World War II.
Research has also suggested that garlic can help prevent heart disease, lower cholesterol, reduce high blood pressure, regulate blood sugar, boost testosterone levels, and even prevent of cure the common cold! Of course, with all those benefits come with a couple of side effects - halitosis (commonly known as “garlic Breath”) and garlic-scented sweat (although cooking and/or roasting reduces both of these effects).
